At 2 years old, my son Zachary had developmental delays, which resembled autism. As he got closer to 3 years old, the delays became more obvious. He was not making good eye contact, his speech was not developing appropriately and he did not want to play with other children.
He began speech therapy and it helped him to improve, but I did not see the results that I hoped for. His doctor suggested that we test him for food sensitivities. We discovered that he was sensitive to gluten, wheat, dairy and eggs. I immediately changed his diet. Slowly but surely, my little boy began to talk, make eye contact and socialize. This was everything I hoped for and more!
Once I realized what a huge difference these dietary changes made in Zachary, I wanted to help other families that also had a need for allergen free baked goods. Stacy’s Gluten Free Goodies was created.
My son is now 11 years old and he no longer has any developmental delays! I hope to help other families with food challenges by providing delicious, allergen free goodies.
